Currently an Emeritus Professor in Food Technology at the University of Newcastle.  Has 40 years experience with food and agriculture commodities while at CSIRO, University of Otago NZ, University of NSW, AWB and University of Newcastle with extensive consulting to the United Nations agencies FAO and IAEA as well as AusAid in horticultural development projects in Asia.

Considerable research particularly in horticultural crops has resulted in 300 research papers and 9 books including Postharvest which is now in its 5th English edition with translated editions in Chinese, Spanish, Malaysian and Farsi (Persian). 

Research on postharvest medicinal herb quality has been to understand effects on quality at harvest, during handling, drying, storage and processing.
